What in fact is the meaning of abbreviation HACCP?
HACCP is an abbreviation for the English term “Hazard Analysis and Critical Control Points”, which is used in the world for set of measures, which purpose is to eliminate a production hazard of unwholesome products (foods) by means of assessment of infection hazard before the product comes into being.
The analysis is implemented as a system of prerequisite measures for assuring food safety and final product during all activities connected with production, processing, storage, manipulation, distribution and selling to the end user.
The abbreviation HACCP is not used in the Czech food legislation and the system is termed as “critical points system” here.
